A cool, pure and elegant nose speaks of citrus, oyster shell, white flowers and iodine hints. There is excellent volume for a villages level wine with very good mid-palate concentration present on the medium-bodied flavors that conclude in a citrusy, clean and very dry finale. I very much like the delivery and this too will need at least a year or two of bottle age first. Recommended as this delivers very fine and altogether classic quality.
The Domaine Fèvre Chablis AC from their own parcels of vines is always a step up, as Didier explained that “William Fèvre bought the best parcels of villages- all close to the premier crus- during the 1940s and 1950s” when Chablis prices were very weak and vignerons were often happy to sell. The 2014 version is a superb AC, offering up a far more reserved bouquet of lime, green apple, flinty minerality, citrus peel and a gently smoky topnote. On the palate the wine is pure, full-bodied, focused and very precise on the attack, with a lovely core, bright acids and excellent grip and nascent complexity on the long and snappy finish. Drink between 2017-2035.
